Fresh tuna, tomato and coriander on long-fermented dough.

Bronze + Paul Cho
Good food, inspired by the world and run through by live fire.
The house
On the ground floor of Shopping Eldorado, in São Paulo, Pipo brings together the repertoire of Felipe Bronze and pizzaiolo Paul Cho in a menu where fire plays a leading role: in the tomato sauce, in the toppings and across many preparations.
Open every day, Pipo also has a terrace and hosts events and celebrations. It is the second restaurant from Bronze+, the initiative created by Felipe Bronze to bring culinary talent together around collaborative projects.

The fire
It isn't reserved for meat. It shows up in the pizza's tomato sauce, in the corn, the cabbage, the fish and the bread that comes out hot — the thread that ties familiar recipes to more elaborate ones.
The pizzas
Tomato sauce taken through the fire and combinations Felipe and Paul designed together — a contemporary read on pizza, without ceremony.

Fresh tuna, tomato and coriander on long-fermented dough.

Pancetta, cheese and tomato sauce charred over the fire.

Mixed mushrooms, cheese cream and wild rocket.

Fire-roasted corn, cheese and fresh coriander.

Potato, pancetta and egg yolk — the house favourite.

Onion charred over the fire and melted cheese.

Dessert, in pizza form.

The kitchen
The menu is completed by a kitchen developed by Felipe Bronze and executive chef Andreza Luísa, pairing familiar recipes with more elaborate preparations — very often with live fire at the centre.
Some dishes are made for the middle of the table. Others are best kept to yourself.
Bringing together different experiences, repertoires and specialities to create projects with an identity of their own.
The chefs
The meeting of a chef who made fire his signature and a pizzaiolo who rewrote pizza in his own way.

Chef and founder of Bronze+
Born in Rio, multi-talented and with a creative, entrepreneurial streak, he studied Economics and Law before turning to gastronomy. Today he shuttles between cities to run the businesses: Oro, in Rio de Janeiro, with two Michelin stars; Lina and Pipo, in São Paulo; plus Bronze+ and FOMO.

Pizzaiolo
One of the rising names in São Paulo's food scene, he runs Paul's Boutique, his own New York-style pizza project. Over more than a decade in renowned kitchens, he worked at Roberta's in New York and led Bráz Elettrica and Bráz Pizzaria.
The house
A dining room that changes with the hour: bright lunches through the glass, warm nights under the cork ceiling. And a terrace opening onto the green.
